Pai Mu Tan - White Peony is one of the most famous Chinese white teas. It is made from a skilled harvest of leaves from the Da Bai varietal of the Camellia sinensis small leaf tea plant. The unopened apical bud and the two freshly opened leaves immediately beneath the bud are carefully plucked to avoid bruising and to minimise the risk of oxidation. The infusion is pale in colour with a soft, light, velvety texture, and a slightly nutty flavour.
